Dosa is south Indian breakfast or meal dish made up of fermented batter of rice and types of lentils.
There are many varieties of Dosa depending on its folding styles , fillings and it's thickness.
Usually batter is spread on very hot pan and cooked till it becomes crispy and golden brown.
To get it's exact crispiness you need to make its batter in correct proportion of lentils and rice . And of course it should fermented nicely.
How to make crispy Dosa recipe with step by step photos !
INGREDIENTS :
2.5 cups rice
( Use pre-boiled rice if possible)
1 cup white lentil splits without cover
(Urad daal)
1/2 cup gram splits ( Chana daal)
2 tsp fenugreek seeds
Salt to taste
Sugar 1 tsp
METHOD :
How to make perfect Dosa batter?
1. Wash rice and lentils seperately.
2. Soak rice and lentils seperately in water for 8 hours/ overnight.
3. Soak urad daal , chaana dal and fenugreek seeds together.
4. After 8 hours drain water from it.
5. Grind rice and lentils seperately.
6. Add water as required. Make medium consistent batter. It should not be very watery .
7. Mix rice and lentils paste together.
8. Add 1 tsp sugar in it .
9. Pour this batter in a large pot. Cover with lid.
10. Keep this pot in hot place .
11. Batter get fermented in 12 hours .
If it's summer , it gets fermented in 8 hours or before.
In winter , you need 12 hrs .
If you are living in very cold place like snowing outside, preheat oven for 30 degree for 5 minutes. Place your batter pot in pre heated over overnight.
I tried this method many times and it works . 😊
12. After fermentation, you can see batter becomes fluffy and rised in size.
13. Batter is ready to make Dosa.
14. You can use this same batter for uttapa also.
How to spread Dosa in a pan ?
1. Heat non stick big size pan.
2. Spread salty water over hot pan . Wipe it with cloth.
3. Take stainless steel bowl. Pour 1 bowl dosa batter at center of pan.
4. Spread it over pan . To spread , use bottom of bowl. Move it clockwise to spread batter over pan.
5. You must be very quick in this .
6. Let it cook on high flame for 2 minutes.
7. Cook till it's surface becomes golden brown.
8. Roll this ready dosa in pipe shape.
9. Serve it hot with coconut chutney and sambar .
