INGREDIENTS :
FOR EGG BIRYANI GRAVY
2 sliced green chillies
Chopped mint 6-7 leaves
1 chopped onion
1 spoon ginger garlic paste
1 tsp cumin powder
1 tsp coriander powder
Pinch of salt
1/2 tsp turmeric powder
2 BLACK cardamom
Turmeric powder 1/2 tsp
FOR MAKING RICE
2 cups biryani rice / any good quality whole rice
Pinch of salt
1 spoon cumin seeds
2 spoons oil
Warm water 1 1/2 cup
1 tsp pure ghee
OTHERS
6 boiled eggs
2 spoons butter
Handful of fried onion
METHOD :
HOW TO MAKE RICE FOR BIRYANI ?
1. Take 2 cup good quality whole rice .
2. Wash it with water .
3. Soak it for 15 min . Drain all water.
4. Heat oil for tampering
5. Add 1 tsp cumin seeds
6. Let it pop.
7. Add soaked rice and roast nicely till it becomes light in weight .
8. Add 1 1/5 cup warm water.
9. Let it boil for 1 minute .
10. Make stove flame medium . Let it cook for few more minutes till it cooks completely.
11. Add 1 tsp pure ghee. Mix properly.
12. Let it cool down completely.
How to make fried onion for biryani ?
1. Cut 2 big sized onions thin
2. Heat 4-5 spoons oil
3. Fry thin sliced onions til turns golden brown.
4. Remove it from oil.
5. Keep it on kitchen tissue to remove excess oil
6. Add 2 spoon sugar . Mix properly. It keeps your fried onion crunchy for longer time.
How to make eggs for biryani ?
1. Boil 6 eggs.
2. Once cools , peel them.
3. Heat 1 spoon oil in a pan.
4. Add 1/4 tsp turmeric powder, 1/2 tsp red chilly powder.
5. Mix well. Add boiled eggs
6. Roast boiled eggs with masala
7. Once done , cut in half to make two pieces
8. Keep them aside , ready to mix in biryani.
How to make biryani gravy ?
1. Make fine paste of all ingredients listed above for biryani gravy.
2. Heat 2 spoons oil for tampering.
3. Add gravy paste in it.
4. Roast nicely till starts smelling nice . It's starts releasing oil once roasted nicely.
5. Add pinch of salt.
6. Keep this gravy ready for biryani
Make layers of biryani
1. Take flat surface cooking pan.
2. Grace it with melted butter.
2. Make approx 5 cm first layer of plain rice we make for biryani .
3. Put half sliced roasted boiled eggs on it .
4. Pour gravy over it . Spread it to all sides so that it covers lower rice layer.
5. Add 1 more rice layer of 1 cm.
6. Spread handful fried onion and sliced mint leaves. Don't use ready made fried onion.
Homemade fried onion give perfect taste to your biryani.
7. Put last rice layer over it
8. Add 2 spoons pure ghee.
9. Preheat oven for 150 °C
10. Seal your biryani pot with foil paper.
11. Put this biryani pot for approx 30 minutes on 50°C . This give nice taste.
12. Layered egg biryani is ready to serve.
13 Serve it with raita.
