VEGETABLE BIRYANI

Green vegetable biryani is spicy , vegetarian aromatic biryani made in green coriander gravy .

It's easy one pot meal option .

INGREDIENTS

2 cups whole biryani quality rice
I used India Gate Basamati Rice

7-8 spoons oil
Homemade ghee
1 spoon each Cardamom powder ,Coriander powder ,Red chilly powder
1/4 spoon turmeric powder
Chopped fresh mind and coriander
1 big bowl fried onion
1 chopped tomato 🍅
2 spoons curd

Thin sliced vegetables 
2 carrots 🥕 🥕
3 potatoes 🥔 🥔 🥔
1 big sized capcium 
1 cup chopped cauliflower 
2 big size sliced onions
7-8 beens 
1/2 cup green peas

INGREDIENTS FOR GRAVY
1/ onion
2 green chillies
1 inch ginger
4 garlics peeled
Handful of mint
Handful of coriander
1 black cardamom
1 green cardamom
1 small piece cinnamon


METHOD :

1. Slice all vegetable thin.


2. Boil it in water till half cooked.
3. Drain extra water. Keep it aside.


4. Mix all ingredients together listed above under "Ingredients for gravy "
5. Grind it to fine paste
6. Add water as needed.


7. In a cooking pan , heat 4-5 spoons oil.
8. Add chopped onion.
9. Saute till it becomes transparent.


10. Add gravy that we made before.
11. Roast it on low flame till it stats releasing oil and aroming.
12. Add red chilly powder, turmeric powder, coriander powder and Jeera powder.
13. Roast well


14. Add sliced vegetables
15. Add 2 spoons curd.


16. Mix well.


HOW TO MAKE RICE FOR BIRYANI ? 


1. Take 2 bowl rice .
2. Wash it in water. Keep it aside for.20 minutes.
3. In a.cooking pot heat 2 spoons oil.
4. Add 1 tsp Jeera
5. Add washed rice . Roast it nicely.
6. Add 3 bowls warm water.
7. Add salt to taste.
8. Let it cook on medium flame.
9. Once cooked,let it cool down.

HOW TO MAKE LAYERS FOR BIRYANI ? 

1. First Layer 
Grace a cooking pot with homemade ghee.
Spread cooked rice . Make its first layer.


2. Second Layer  
Spread layer of vegetable mixed in gravy


3. Third layer
Spread chopped coriander, chopped mint and fried onion .
Repeat this sequence for next layers.one more time.



4. Last layer
Make a last layer of cooked rice
Spread  fried onion and some homemade ghee over it .


5. Cover this pot with aluminium foil and place it in oven . Turn it in 30 °C for 15 minutes.
OR
You can keep it in low flame gas flame.

6. Biryani is ready to serve.

7. Serve it with cucumber raita.
