KOLHAPURI PANDHARA RASSA

Pandhara Rassa is authentic Kolhapuri chicken/ mutton curry made with coconut milk and meat stock.

Ingredients:

1/2 kg meat or chicken with bones
1 onion 

For marination :
1 cup thick curd 
2 tablespoon garlic paste
Salt to taste

For Pandhara Rassa:
2 tsp oil for tempering
1 cup fresh , grated coconut
10 cashew nuts
2 spoon sesame seeds
2 spoon poppy seeds
2 cloves
1 inch cinnamon
1 bay leaf
2 dried red chilies
Salt to taste
2 green cardamom

METHOD : 

Pandhara Rassa is chicken / mutton curry made with its stock.
To get meat stock you must cook meat separately.
Don't add turmeric powder while marinating chicken as we are making Pandhara Rassa from its stock. We want white color stock, not yellow one

How to get coconut milk from fresh coconut

1. Take grated , fresh coconut. Add 1/4 warm water and grind it in grinder
 2.  Squeeze it to get coconut milk
 3.  Once the grated coconut becomes completely dry again, add some warm water and grind it to get some more milk.
 4.  Strain coconut milk  with strainer.
You can use ready made coconut milk instead of making it at home.

Tempering Rassa 

 1.  Soak poppy seeds, sesame seeds, cashew and small piece of ginger garlic for half an hour in warm water.
 2. Add some more water and make a paste of it .
Make a paste of cashew nuts too.
 6.  In a cooking pot, heat oil for tempering.
 7.  Put the cloves, cinnamon, bay leaf, green cardamom, dried red chilies in oil.
 8.  Add poppy paste to it and stir well .
 9.  Add cashew paste and saute for a minute.
 10.  Put butter / chicken stock. Saute . Let this mixture boil for 3-4 minutes on medium flame.
 11.  Add coconut milk and stir well. After adding coconut milk, don't boil Pandhara Rassa. Just let it heat on low flame.
 12.  Add salt to taste.
 13.  Let it become warm for some more time.
14 . Kolhapuri Pandhara Rassa is ready to serve.
