THAI RED CURRY PASTE RECIPE
INGREDIENTS:
3 dried rec chilies
Lemon peel approx of 1/2 lemon
Lemon grass chopped ( optional)
1 small onion chopped
1 tsp coriander powder
1 tsp cumin powder
1 inch ginger chopped
6-7 garlic cloves
3-4 fresh basilica leaves
1 tsp white peppercorns
4 cashew nuts
1 tsp sesame seeds
Method :
1. Add all dry ingredients together
2. Make its fine paste . For this you can use electric grinder or traditional stone grinder .
Traditional stone grinder gives authentic taste.
3. Add ginger , garlic and other ingredients left .
4. Add salt to taste.
5. Grind it to fine paste .
6. If you need, add 2 tsp olive oil . Don't use water while grinding.
VEGETARIAN THAI RED CURRY RECIPE
INGREDIENTS :
3 tsp Thai curry paste
1 small onion chopped
3-4 vegetable oil
1 tsp cumin seeds
1/2 tsp turmeric powder
1 1/2 cup coconut milk
Salt to taste
1 tsp sugar
1/2 tsp fresh lemon juice
1 tsp soya sauce ( optional)
Thin sliced vegetables
Carrot
Red capsicum
Yellow capsicum
Carrot
Zucchini
Cauliflower
You can add paneer pieces and green peas if you like.
For garnishing :
Red chilly flakes
Chopped coriander
METHOD :
1. Take a large bowl .
2. Add coconut milk and Thai curry paste together.
3. Mix it well. Keep aside.
4. In a cooking pot heat 2 tsp oil for tampering.
5. Add cumin seeds . Let it pop
6. Add chopped onion. Saute till turns transparent.
7. Add 1/2 tsp turmeric powder. Saute well.
8. Add all thin sliced vegetables.
9. Saute for a minute .
10. Cover your cooking pot. Let them steam cook for 2 minutes.
11. After 2 minutes pour coconut milk and Thai curry paste mixture.
12. Add salt and sugar to taste
13. Add 1/2 cup of warm water. You can change water quantity as per thickness you want.
14. Cook it for 5 minutes.
15. Add soya sauce and lemon juice in it .
16. Let it cook for 1 more minute.
17. Your Thai red curry is ready .
18. Garnish it with red chilly flakes and chopped coriander.
19. If you want this curry little bit spicy, add 1/2 tsp red chilly powder while cooking
20. Serve Thai curry hot with steamed rice.
