BHAJANI CHAKALI - POPULAR MAHARASHTRIAN DIWALI SNACKS WITH STEP BY STEP PHOTOS!

CHAKALI is popular Maharashtrian Diwali snacks.
Bhajani Chakali is made with rice, mix lentils, wheat and some spices added together.
Meaning of word Bhajani in Marathi is 'To roast'.

Here we wash, dry and roast  rice, wheat , lentils and spices together and then grounds to flour. 

So Chakali made with this flour is known as BHAJANI CHAKALI



INGREDIENTS:

2 cup chakali bhajani
(It's lentils, wheat, rice mixed flour in proper proportion)
2 spoons all purpose flour
2 tsp red chilly
1 tsp cumin powder
1 tsp coriander powder
2 tsp sesame seeds
1/2 tsp roasted carom seeds
1/4 tsp asafoetida
1/4 tsp turmeric powder
1/4 cup very hot oil
Oil for frying Chakali

METHOD:

1. Mix all ingredients instead above except very hot oil.
2. Mix all dry ingredients together.

3. Add 1/4 cup very hot oil . It's starts bubbling up.
4. Mix it together with spoon.

5. Now mix it with hand in such a way that no flour lumps should be formed in Chakali flour.
6. Add warm water as needed. Make a dough of it.

7. Cover it with wet cloth.
Keep it aside for 30 minutes.

8. Take a small portion of dough.
Roll it in cylindrical shape .

9.Apply homemade fresh butter on it from all sides.
10. It will help to make chakali crispy.


11. Take a chakali maker . Make sure it's completely dry
12. Apply oil it it's inner surface.
13. Press cylinderical shaped dough inside chakali maker.
14. Roll chakalis on small paper sheet / aluminium foil sheet.


15. Take a frying pan. Heat oil in it on high flame.
16. Carefully put chakali in heated oil. It will start bubbling.


17. Turn it to other side when it reduces bubbling.


18. Deep fry chakali from both sides on medium flame.
Chakali  automatically settles down in frying pan when roasted nicely.

19. Don't fry on high flame. Chakali becomes soft after cooling.

20. Keep on paper towel to remove excess oil.

21. Bhajani Chakali is ready to serve. Keep it in airtight container for longer use.
