EGG LABABDAR is creamy egg curry with awesome aroma and delicious taste !

INGREDIENTS
5 eggs
oil for tempering
1 chopped onion
1/2 chopped tomatoes
salt to taste
1/2 tsp sugar
curry leaves
4-5 fresh mint leaves
OTHER SPICES
1 tsp cumin powder
1 tsp garam masala
2 tsp red chilli powder
1/4 p turmeric powder
INGREDIENTS FOR GRAVY
1 chopped onion
2 spoons sesame seeds
6-7 cashew nuts
2 spoons grated dried coconut
1 bay leaf
2 cloves
1 small piece cinnamon
2 garlic cloves
1 inch ginger
1 black cardamom
METHOD
PREPARATION
1. Add water and boil eggs in pressure cooker.
2. Let them cool down.
3. Peel them.
HOW TO MAKE GRAVY ?
1. Add 1 tsp oil in a heated pan.
2. Roast all ingredients written in gravy list.
3. Grind it to make a fine paste. Add water as requires
HOW TO MAKE EGG LABABDAR ?
1. Heat oil for tempering.
2. Add cumin seeds, curry leaves, chopped onion an chopped tomatoes.
3. Saute well till onion turns golden brown.
4. Add 1/4 tsp turmeric powder
5. Add paste of gravy that we just made.
6. Saute well.
7. Add 1 tsp garam masala , 2 tsp red chilli powder, salt to taste.
8. Saute well. Let this gravy cook on medium flame for next 2 minutes. It starts separating oil.
9. Add fresh mint leaves and 1/2 cup warm water.
10. Cover it with lid and let it cook for some more minutes.
11. Sparkle sugar over it . It gives oily layer to egg curry. Don't mix. Let it cook covered for 1 more minute.
12. One gravy is ready, add boiled eggs.
13. Give a small cut to boiled eggs . Mix them in gravy .
14. Cook for another minutes.
15. Egg Lababdar is ready to serve . You can spread grated egg white if you want .
16. Serve with Roti or Chapati (Indian flat bread)
