Karanji / Ghujiya / Maharashtra Diwali Sweet Snacks



Karanji is Maharashtrian sweet snacks often made for festivals like Diwali and Ganesh Chaturthi.

Karanji is everyone's favourite part of Diwali faral . Crispy Karanji's stuffing is made up of desiccated coconut , semolina and sugar.


Here I will show you how to make Karanji with step by step photos.

You need very few ingredients for it .

You can make it in bulk and store them in air tight container. Use it for next few weeks. Many people likes to eat this snacks with evening tea also.

We can make Karanji with two types. One is layered colourful karanji and another single layer without colours Karanji. 

Layered Karanji need some extra efforts. 

Here I am showing you how to make single layer karanji


Ingredients :

2 cups all purpose flour
1/4 cup semolina
Pinch of salt
3 tsp oil
Warm water


Recipe

1. Add all purpose flour , salt and semolina together. Mix it dry.
2. Add 3 tsp very hot oil to it . Mix it with hand . Make sure there are no flour  lumps in it.
3. Add necessary warm water and make a dough . 
4. Cover it with wet cloth and keep aside for 1/2 hour.


5. Take a small portion of dough. Make a roll of it . 
6. Cut it into small pieces



7. With a pin roll, roll every piece into oval shape thin layer. 
8. Try to roll it without use of dry flour . As we are going to stick it's edges , we need oily . 


 9. With a spoon , add coconut stuffing at its center.


 10. Join edges as shown below


 11. Press sticked edges so that it should not separate while frying.
12. Cut it with cutting roller to get nice design .


13 . Take oil in pot and heat it on high flame.
14. Deep fry karanji  in heated oil.
15 . While frying make sure you have enough oil in pot .

16. Fry it to golden brown from both sides.
17. Remove it from pot. Keep on tissue paper to soak excess oil.
18. Let it cool down completely.
19 . Keep it in air tight container for longer use.
