Karanji Stuffing

Karanji is Maharashtrian sweet snacks often made for festivals like Diwali and Ganesh Chaturthi.

Karanji is everyone'sfavourite part of Diwali faral . Crispy Karanji's stuffing is made up of desiccated coconut , semolina and sugar.

Here I will show you how to make Karanji stuffing with step by step photos.

You need very few ingredients for it .

You can make it in bulk and store them in air tight container. Use it for next few weeks. Many people likes to eat this snacks with evening tea also.



Ingredients :

1 cup desiccated coconut
1/2 cup semolina
1/4 cup sesame seeds
1 and 1/2 cup powder sugar
1 tsp cardamom powder
2 tsp ghee

Recipe :

1. Take a flat non stick pan and make it hot on medium flame.
2. Roast desiccated coconut on hot pan .
3. As it turns brown very quickly, we need to stir it continuesly.
4. Take it out of hot pan when it roasts completly and before starting to take brown colour.

5. Take 2 tsp ghee in same hot pan. Let it melt . Add 1/2 cup semolina and roast it till it become light.
If possible use corse semolina .
6. Take it out of pan and add in roasted coconut.


7. Add pinch of salt and 1 tsp cardoamc powder. Cardamom powder will add a.nice smell to this stuffing.

8. Add 1/4 cup roasted sesame seeds.
9. Add 1 and 1/2 cup powder sugar.

10. Mix it well with hands. 
11. You can add roasted , chopped dry fruits also. 
12.  Keep this stuffing in air tight container for longer use.
