Shev is crispy , non spicy snacks made of gram flour.
It is main ingredient of street foods like bhel, chaat and ragada .
In Maharashtra, it is faral item on occasion of Diwali festival.
Ingredients :
1 cup gram flour
1 spoon ajwain
Pinch of salt
1/2 tsp asafoetida
1/2 tsp turmeric powder
Water
Oil for frying
Recipe :
1. Take gram flour in mixing bowl.
2. Add salt, asafoetida, termaric powder and rosted ajawain.
3. Add 2 spoon boiled , very hot oil in it.
4. Mix it well.
5. Knee a soft , sticky dough . It's good to say as batter instead of dough as it's sticky and softer than usual dough.
6. Cover with wet cloth and keep aside for 30 min
7. Take a chakali maker.
8. Replace it's lower thin chakali maker plate with shev plate. Shev plate is one with small holes.
10. Grace oil inside shev maker.
In a frying pan , heat oil for frying.
11. Insert shev batter inside maker . Press with hands. Cover tight.
12. Shev comes out as thin wires when we press shev maker.
13. Let this shev drop directly in hot oil frying pan.
14. Fry it on medium high flame.
15. Turn it to other side in 1/2 minute.
16 . Don't overcook as it changes it's colcolour to brown .
17. Try not to break while turning other side
18. Remove from frying pan. Keep in on paper towel to remove excess oil
19. After cooling, keep it in air tight container.
