VEGETABLE PULAO - AN AUTHENTIC INDIAN RICE

Ingredients:

2 cups Basmati rice (washed)
Salt to taste
1 chopped  carrot
1/2 cup green peas
1 capsicum
1 tsp ghee
Chopped coriander (optional)

FOR TEMPERING

1 spoon cumin seeds
1 tbsp vegetable oil
1 inch cinnamon
2 cloves
1 bay leaf
2 Green Cardamom
1 tsp ginger garlic paste
1 tsp grated coconut


Method:

1. Wash 2 cups Basmati rice with water.Rinse it . Keep aside for 10 minutes minutes.

2. In a large vessel, heat 1 tbsp oil for tempering .

3. Add cumin seeds, cloves, cinnamon, bay leaf, cardamom. Add 1 tsp ginger garlic paste and grated coconut.

4. Add small pieces of carrot and capsicum. Let it cook for 1 minute.

5. Add 1/2 cup boiled green peas. If you are using frozen peas, no need to boil it before.

6. Add washed rice in it . Roast it completely. You will feel rice light in weight after it roasts nice .

7. Add 1 and 1/2 time  hot water to the rice.

8. Add salt to taste.

9. Let rice boil once on large flame.

10. Then cook it on  medium flame .

11. Cook till rice stops sticking to hand if you press fingers on rice.

12. Add 1/2 spoon of ghee.

13. Add chopped coriander leaves and stir . Be careful not to break the rice while stirring.

14. Serve it hot with Dal or Curry.
