INGREDIENTS:
For making Pulihora masala
2 spoons sesame seeds
1 spoon coriander seeds
2 spoons dedicated coconut
1/2 spoon Jeera
1/2 spoon fenugreek seeds
1 spoon urad daal
1 spoon chana daal
2 dried chillies
For tamarind rice :
2 cups already cooked non sticky rice
2 spoons peanuts
1/2 spoon Jeera
1/2 tsp urad Dal1/2 tsp fenugreek seeds
1/2 tsp termaric power
Salt to taste
1 cup tamarind pulp
Asafoetida
1 spoon sugar
1/2 tsp mustard seeds
5-6 coriander leaves
METHOD:
1. To make Pulihora masala , take all ingredients listed above for making masala.
2. Roast it all in a heated pan for 3-4 minutes till it releases its aroma.
3. Grate it to a fine powder.
OR
You can you readymade Pulihora masala available in market.
But homemade masala is always better in taste and aroma than readymade.
4. Take a cooking pot. Add 1.5 times water of rice you have taken.
Let it boil . Add 1 spoon vegetable oil and salt to taste.
Add washed rice and let it cook on medium flame.
Always use 1 spoon oil to avoid sticky rice.
5. In another cooking pan, heat oil for temparing.
Add Jeera and mustard seeds. Let it pop.
Add curry leaves, asafoetida, turmeric powder, peanuts, fenugreek seeds and urad Dal.
6. Add 1 cup tamarind pulp.
You can use readymade pulp or can make it at home by soaking dried tamarind into luckwarm water for 1/2 hour.
7. Add salt and sugar to taste. Let this boil for 2 minutes. It should become thick paste.
8. Add already cooked rice into it and mix it well
Cover this rice for a minute and let it cook with pulp for some time.
9. Add dry Pulihora masala that we already made above .
Mix it well. Add red chili powder if you want it more spicy.
10. Serve it hot with papadam.
