Try this easy chutney recipe made with ridge gourd's skin.
Serve this tasty chutney with paratha or with steemed rice along with roasted papad .
For this recipe, we want just skin / peel of ridge gourd. The flesh remained can be used to make dry sabzi.
Ingredients :
1 cup ridge gourd skin / peel
1/2 cup peanuts
4-5 green chillies
1/2 cup Coriander
3 garlic cloves
1 spoon fresh lemon juice
For seasoning :
1 tsp oil
Mustard seeds
Salt and sugar 1 tsp
Curry leaves 3-4
Method :
1.Wash ridge gourd and peel it's skin.
2. Heat 1 tsp oil in a frying pan.
3. Roast ridge gourd skin, peanuts , green chochill and garlic clove for about 2 minutes.
4. Keep it aside and let it cool down.
5. Crush it with remaining ingredients in a blender.
6. Add lemon juice and little water if required. We don't want fine paste here.
7. Heat oil for tampering.
8. Add 1 tsp mustard seeds, curry leaves and off gas flame.
9. Add crushed mixture from blender.
10. Add salt and sugar as per taste.
11. You can keep this chutney in air tight container and can use for a week.
12. Serve it as a side dish to paratha or steemed rice.
