Mutton/ chicken Kala is an authentic Maharashtrian non - vegetarian famous food menu.
It is spicy gravy dish with its best taste and aroma.
Serve Mutton / Chicken Kala with hot Jowar Bhakri or Roti.
Ingredients :
For gravy:

1 onion chopped
5 green chilies
2 cloves
1 inch cinnamon
1 bay leaf
3 cardamoms
6 cloves of garlic
2 inch ginger chopped
6-7 fresh mint leaves chopped
Chopped coriander
1 tsp garam masala
1 tsp coriander powder
1 tsp cumin powder
Salt to taste
1/2 tsp turmeric powder
2 tsp red chilli powder,
1 large bow curd
1 lemon juice
Chicken 1/2 kg
7 to 8 large onions to make fried onion
Here I am sharing chicken kala detailed recipe.
To make mutton kala just replace chicken pieces with mutton pieces.
Remaining recipe is same for both.
Method :
How to marinate chicken pieces ?
1. Add all above spices (cloves, cinnamon, bay leaf, cardamom), 1 large chopped onion, garlic, ginger, 5 green chillies, 1/2 lemon juice together.
2. In a blender make a fine paste of it. Add little bit water if require.
3. Wash the chicken pieces clean with water . Cut them into medium size if they are too big.
4. Add just made fine paste of spices in chicken pieces and mix well . Make sure all pieces covered properly by paste.
5. Add 1 large bow thick curd. Add 4 tbsp oil.
6. Add salt to taste, one spoon of garam masala each, coriander powder, cumin powder, 1/2 spoon turmeric, 2 spoon red chilli powder.
7. Add finely chopped mint leaves, finely chopped coriander leaves, chopped green chillies. (Use half bowl fresh mint leaves and coriander leaves for marinating.)
8. Gently stir the mixture and put it in the fridge at least 6-8 hours. Let spices give gentle taste and aroma to chicken.
How to cook Chicken Kala ?
We are going to cook above marinated chicken absolutely without adding water in it.
There is already some water in it because of added spices paste along with salt. This will help to cook chicken nicely and gives it best taste along with aroma.
1. As we kept chicken pieces marinated for 6-8 hours , all spices already reached inside it.
2. Take out this marinated chicken from the fridge and keep it out at normal temperature for at least 1/2 hours.
3. Transfer this chicken marination into a thick cooking pot. As we are going to cook this recipe on low medium flame for long time, always use thick bottom cooking pot for it.
4. Cover with lid and cook this chicken 3-4 minutes on high flame.
5. Make flame medium low and and cook about 1/2 hours.
6. Keep stirring gently in between. So it will cook well from all sides.
8. Once chicken is cooked, add fried onion (3 to 4 medium sized onions) and cook it for another 5 minutes.
Adding a lot of fried onion gives it black colour and tastes pungent over the usual chicken.
Serve this with hot Jowar Bhakri or Roti.
