WHOLE WHEAT KHEER

Delicious Maharashtrian sweet recipe whole wheat kheer  served as dessert.
It is made with cracked wheat, whole wheat, jaggery and dry fruits
Whole wheat kheer considered as Naiwedya for lord Ganesh on the day of Ganesh Chaturthi festival.

Ingredients
Whole wheat 1/2 cup
Cracked wheat 1 cup
2 spoon rice
4-5 spoon homemade ghee
Water as needed
Jaggery 1 cup grated
Dry fruits : dates, almond, cashew,raisins, pista , thin sliced dry coconut
1 spoon green cardamom powder.

Preparation
1. Mix cracked wheat, whole wheat and rice together.
2. Wash it with water for at least 3 time. Make sure  dry wheat skin particles floating on water are removed.
3. Soak this in water for about 8-10 hours.

4. After soaking for 8-10 hours, keep it in pressure cooker pot 

5. Cook it in pressure cooker with 4-5 whistles. It takes longer time to cook than normal rice.

6. Let it cool down completely.


7. Grate jaggery and keep it ready to mix in kheer.

8. Soak dry fruits of your choice for about 1 hour. Keep ready to pour in kheer.

Method :

1. Take thick base cooking pot. Let in on medium high flame stove.

2. Add 2 spoons homemade ghee. Apply it gently on bottom of pot.
It will help to keep it's bottom non-sticky. Chances of over cooking and burning kheer are low when you apply ghee at its bottom


3. Pour pressure cooker cooked wheat , rice mixture in it.

4. Let it cook on medium flame for.about 15 minutes. It takes time to cook mixture again with ghee.


5. Mix it nicely with traditional wooden mixi (In Marathi it is called Ravi)


6. Once it is cooked , add grated jaggery. Let it cook on medium flame for 15 more minutes.


7. Add soaked dry fruits. Let them cook to soft.Dry coconut slices , dates takes more time to cook .
Add 1 spoon green cardamom powder.

8.Add some more ghee in it.

9. Your whole wheat kheer is ready to serve. Serve it with steamed modak.
