Ingredients :
1 cup Rawa / course semolina
1 cup thick curd
1 green chilli, ginger grated
Salt and sugar as per taste
Water as required
1 pack Eno/ 1 tsp fruit salt / 1 tsp baking soda
1/2 tsp lemon juice
For tampering :
Tadka : 1 spoon oil
1 tsp mustard seed
1 green chilli
salt sugar as per taste
1/2 cup water
Method :
1. Add semolina , curd, grated ginger and chilly,salt and sugar together.
2. As water as required.
3. Make thick batter like IDLI
4. Keep this mixture aside to set for 10 minutes.
5. After 10 minutes stir this mixture once. Add 1 pack eno. To activate Eno / baking soda sprinkle 1/2 tsp lemon juice over it. It starts bubbling. Stir this mixture just once .
We just want to mix Eno bubbles in batter to make it fluffy. If you stir it more , bubbles disparears and batter will set down again
Avoid over stirring.
6. Pour this batter in cooker pot grassed with oil
7. To Steam it I used pressure cooker.
Add 1 glass water at bottom of pressure cooker. Place steal stand or small steal bowl at pressure cooker's center.
Place pressure cooker pot filled with batter over it.
We are placing it on bowl or stand just to avoid water which can go inside batter if we put directly in cooker.
8. Cover it with lid. REMOVE PRESSURE COOKER'S WHISTLE.
9.Steam it for 20 min . To check Dhokla steamed perfectly, use toothpick. Press toothpick at its centre, it should come out without any batter sticked to it.
10. After 20 min remove cooker pot from pressure cooker.
11.Let it cool down for 15 minutes.
12. Move in plate . Cut it in small pieces
13. Tadka:
Heat oil for tampering. Add all ingredients listed above for tampering. Saute all for about 2 minutes. Let this tampering boil with added water .
Spices taste mixed with water adds extra flavour to Dhokla when we pour on it on Dhokla.
Pour this tadka on sliced dhokla.
14. Instant Rawa Dhokla is ready to serve.
