INSTANT GREEN IDLI / RAWA SPINACH IDLI

Instant green idli is  one of South India healthy and tasty dish.
It is made with course semolina and fresh spinach leaves.
 This rich in protein dish is really good option for evening snacks or breakfast.

Ingredients
1 cup course semolina
1 cup thick curd
1 onion chopped
1 inch ginger grated
1/ 2 cup spinach finely chopped or paste
1 tsp fruit baking soda / Eno 1 pack

For tampering
2 spoons oil
1 tsp asefetida 
Salt and sugar for taste
Curry leave 4-5
1 tsp cumin seeds
1 tsp mustard seeds

Method : 
1. In a mixing bowl , add semolina, curd, chopped onion,grated ginger, spinach paste/ chopped together.
2. Add water as needed to get required thickness.
3. In a separate pan, heat oil for tampering.
4. Add all ingredients listed above for tampering.
5. Add this tampering / tadka to idli batter mixture.


6. Mix it well so that no lumps remain in it.
7 . Keep this mixture aseide for at least15 minutes to set.
8. Just before making idli , add 1 tsp fruit salt / Eno .
9. Just mix it twice. Bubbles formed should not banks because of your over mixing batter.


10. Pour this batter in idli stand.
11. Keep cashew nuts over it for decoration. This is optional.


12. Steam it for 5 minutes or till it cooks nicely.
13. Press toothpick at middle of idli to check if it's steamed nicely.
Toothpick should come out without sticking any batter to its surface.


14. Remove idlis from stand. 
15. Spinach idli is ready to serve .
16. Serve it hot with South Indian sambar or chutney.
