BAATI RECIPE WITHOUT OVEN

Few days before I shared Rajasthani Dal Baati recipe here on Amruta's Kitchen
Usually baatis are made in tandoor or in oven.  Previous recipe I shared was how to make Baati in oven.

Some of my followers and readers asked me to share Baati recipe without oven or tandoor.

So I am here again ... With one more delicious recipe of Rajasthani Baati without oven.

Today's for making Rajasthani Baati  we are using pressure cooker and flat strainer . These two things we can easily find in anyone's kitchen .


Ingredients
For Baati

1 cup wheat flour
2 spoons semolina
Pinch of salt and sugar
Carom seeds 1 tsp
Cumin seeds 1 tsp
Homemade ghee 4-5 big spoons

Method:

How to make dough and  roll Baati ?

1. In a mixing bowl, add wheat flour, semolina, carom seeds, cumin seeds, pinch of salt and sugar together.
Some people add pitch of baking soda too. I never use it. It's optional.
2. Add 3 big spoons of ghee in it . I prefer homemade ghee for getting authentic Dal Baati flavour.
3. Add just 1/4 cup of warm water . Mix it to make a dough
4. We don't want to make a dough like roti dough.
 Dough should be dry and consistent to make a Baati by rolling it in two palms.
If you add more water, it becomes sticky and like a roti dough. Baati made with such dough doesn't  bake properly.
5. Roll dough in two palms to make its ball. Make a plus sign on it by pressing palm edges or with a spoon . This helps you to cook Dal Baati from inside too .


How to bake baati in a cooker?

1. Take thick bottom pressure cooker. I prefer aluminium cooker .
2. Spread salt at its bottom. Salt thickness should be up to 2 cm.
3. Keep your gas flame medium low. Cover cooker with lid.  Don't forget to remove whistle . 
5. Let it become very hot for  next 5 minutes .
6. Take a steel flat strainer / any that type stand / channi. Grab it with oil. It avoids sticking dough to strainer.
You can use flat stainless steel pot holder too instead.
7. Put it in hot pressure cooker. Cover and let it become hot for about 2 minutes 
8. Once strainer becomes hot, put your baatis on it.
9. Cover cooker with lid. Let it me for 10 minutes on medium low flame.
10. After 10 minutes, flip them and again let them cook for.next 10 minutes. 
11. Repeat this flipping till baatis cook from both sides and.becomes crispy.
12. Serve them with dal and homemade ghee.
