RAJASTHANI DAL BAATI

Dal Baati Churma is Rajasthan's authentic dish
Even after being Maharashtrian, I am in love with Dal Baati Churma because of its mouthwatering fragrance of desi ghee.

Dal we makes here is combination of many types of lentils. I always consider this dish healthy for kids and rich in protein.

You can make Baati on stove if you have gas flame or can bake in oven. Here I am sharing baked Baati recipe with you . 


Ingredients :

For Dal:

1/4 cup chaana dal
1/4 cup toor dal
1/4 cup moong dal
2 spoons urad Dal
2 spoons masoor Dal
1/2 chopped onion
1/2 chopped tomato
1 tsp ginger garlic paste
Oil for tampering
Salt as per taste
Turmeric powder, garam masala each 1/2 tsp
Red chilly powder 1 tsp
Asafoetida

For Baati

1 cup wheat flour
2 spoons semolina
Pinch of salt and sugar
Carom seeds 1 tsp
Oil 4-5 big spoons

For serving
1 onion chopped
Chopped coriander leaves
1/2 tsp lemon juice

Method:

How to make Dal ? 

1. For making Dal , take all lentils listed in ingredient's list .
2. Wash it. Soak in water for 30 minutes
3. Put in pressure cooker for 10 minutes. It should cook properly.
4. In a big pot , heat oil for tampering.
5. Add 1/2 tsp mustard and cumin seeds. Let them pop.
6. Add chopped onion and chopped tomatoes.
Saute well
7. Add 1 tsp ginger garlic paste
8. Saute . Add turmeric powder, chilly powder, garam masala . Saute well.
You can add clove , bay leaf as cardamom too for tampering. It's optional.
10. Add pressure cooker cooked lentils mixture and let it cook again for 2 minutes with all these spices.
11. Sprinkle chopped coriander over it.

Don't make this Dal too thick. To adjust its thickness, add warm water as required.


How to make Baati ?
With step by step photos

1. In a mixing bowl, add wheat flour, semolina, carom seeds, cumin seeds, pinch of salt and sugar together.
Some people add pitch of baking soda too. I never use it. It's optional.
2. Add 3 big spoons of ghee in it . I prefer homemade ghee for getting authentic Dal Baati flavour.
3. Add just 1/4 cup of warm water . Mix it to make a dough
4. We don't want to make a dough like roti dough.
 Dough should be dry and consistent to make a Baati by rolling it in two palms.
If you add more water, it becomes sticky and like a roti dough. Baati made with such dough doesn't  bake properly.
5. Roll dough in two palms to make its ball. Make a plus sign on it by pressing palm edges or with a spoon . This helps you to cook Dal Baati from inside too .

6. Preheat oven at 200°C for 20 minutes.  Keep rolled baatis in preheated oven for around  20 minutes.
7.Once backed from one side , turn it to other side.
 Let them back from all sides.
Move and roll them again if required.


 8 . Properly backed battis becomes hard and crispy from outside and soft from inside.
9. Deep them once in melted homemade ghee.

Serving Dal Baati

1.  Take a ghee dipped warm Baati. Press it in palm to make its small pieces. 
2. Put this in a bowl.
3. Add very hot Dal over it .
4. Sprinkle chopped onion and coriander.
5. Add two drops fresh lemon juice.
6. Pour 1 big spoon ghee over it.
