Very popular Gujarati dish inseparable of Gujarati cuisine.
A wonderful sweet, spicy ,tangy curry made of buttermilk or yogurt and thickened with gram flour
GUJARATI KADHI !
INGREDIENTS :
2 cups butter milk / 1 cup thick curd
2 spoons gram flour
1/2 tsp cinnamon powder
1 tsp ginger garlic paste
2 dried red chillies
Salt to taste
Jaggery/ sugar
Oil for tampering
4 curry leaves
1 tsp cumin seeds
1/2 tsp Asafoetida
METHOD :
1. Take 2 cups butter milk. Butter milk should not be oily.
2. If you don't have butter milk ready , you can use curd instead.
3. Grind 1 cup thick curd along with 1 cup cold water in grinder for 2 minutes. This gives you nice buttermilk.
4. In this buttermilk add 2 spoons gram flour , 1/2 tsp cinnamon powder . If you have cinnamon stick, grate it on vegetable grater to make its powder.
5. Mix this together . Make sure no lumps of gram flour should remain in buttermilk.
6. Keep this mixture aside.
7. In a.cooking pot , heat oil for tampering.
8. Add cumin seeds. Let them pop. Add asafoetida, ginger garlic paste, red chillies and curry leaves .
9. Saute well . Once ginger garlic paste starts changing its colour, add buttermilk gram flour mixture .
10. Cover cooking pot wit lid. Smell of tampering should remain inside kadhi pot. If you keeps this pot open after adding buttermilk, smell evaporats .
Don't open this lid for next 1 minute.
11. Add 1 tsp turmeric powder, salt to taste , 1 spoon grated jaggery or 2 tsp sugar . Mix it well
12. Keep your stove flame low always after adding buttermilk. Don't let it boil. Once it is hot , off stove flame.
13. Your Gujarati Kadhi is ready to serve .
14. Serve it hot with fried papad and Gujarati khichadi.
