South Indian potato sabji is served with dosa.
Ingredients :
Oil for tampering
1 tsp mustard seeds
4 boiled and peeled potato
2 onions chopped
2 green chillies
1 tsp ginger paste
1/4 tsp asafoetida
1 tsp urad daal soaked in water
Chopped coriander
2 curry leaves
1 tsp turmeric powder
Method
1. Heat oil for tampering
2. Add mustard seeds. Let them pop
3. Add curry leaves
4. Add chopped onion.
Saute well till it turns transparent.
5. Add ginger paste, turmeric powder ,chopped chilly, soaked urad daal and asafoesotida.
6. Saute well
7. Add chopped boiled potatoes.
8. Add salt to taste and 1/2 tsp sugar.
9. Saute well.
10. Add chopped coriander leaves.
11. Mix well.
12. Serve this potato sabji with South Indian dosa.
