I always like to try new variations in cake. Today I tried a cake with dates. The outcome is soft, moist, delicious cake .

Ingredients :
2 cups all purpose flour1/2 cups powdered sugar
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
15 moist dates
Warm water
1/4 cup room temperature butter
1/4 cup vegetable oil
2 eggs
1 tsp vanilla essence
USE WARM WATER TO ADJUST CAKE BATTER CONSISTENCY .
METHOD:
Before making cake , let's make dates puree.
To make dates puree, take 15 dates and soak them in warm water for 30 minutes.
Make a fine paste of it in blender
1. In a mixing bowl, take two eggs.
2. Add 1/2 powdered sugar . Make sure you are not mixing sugar lumps in it .
3. Pour 1/4 cup vegetable oil.
In above mixture , add 1/4 cup room temperature butter . Don't add it directly taking out from fridge . We need butter at room temperature to mix it properly with other ingredients .
Whisk it well till this mixture becomes fluffy.
4. Make dates puree.
To make dates puree, take 15 dates and soak them in warm water for 30 minutes.
Make a fine paste of it in blender
6. Add 2 cups all purpose flour. Make sure you are not adding any lump of flour in cake mixture .
Mix it well .
9. Preheat oven at temperature of 180 degree C.
Grace cake mold with butter . If you have butter paper , you can spread it in cake mold instead of gracing it with butter .
Make sure you are gracing cake mold from all sided carefully.
It will help to come out your cake after baking, without sticking to surface.
Tap it twice to remove air bubble in it .
Arrange dry fruits of your choice over it .
11. Bake this in preheated oven .
Set oven temperature 180 degree C .
Set timer of 30 minutes .
12. It bakes nicely in exactly 30 minutes . Before removing it from oven , check it with tester at center of take . Pinch it till bottom . It should come out clean without sticky cake batter on it .
13. Let it cools down completely.
14. Super soft dates cake from dates puree is ready to serve .
