Ingredients:
For 1.5 kg orange cake
3 cups of all purpose flour
3 cups of fine sugar
4 eggs
1 tsp baking soda
1 1/2 TSP baking powder
1/2 tsp salt
1/4 cup vegetable oil
1/2 cup butter
1 1/2 large glass fresh orange juice
3/4 cup orange zest of 1 orange
2 tsp venilla essence
For frosting:
300 gm soft cheese
1/2 cup butter
1 cup sugar / as per cream taste
1 tsp venilla essence
Walnut ( optional )
Recipe :
How to make orange zest?
1. Cut an orange in half .
2. Squeeze orange juice out of it.
3. Keep orange cover left after squeezing juice out of it in refrigerator for 30 minutes.
4. It will become hard.
5. After 30 minutes, grate it's outers orange part.
6. Cook this grated orange zest in sugar and water for 15 minutes. It will make it sweeter.
Preparation of orange cake batter :
1. Preheat oven at 180 degree C .
2. Beat 4 eggs in large bowl. Blend it with a blender untill it become soft.
3. Add 3 cups of fine sugar and stir it well till mixture become soft and fluffy. ( Add 1/2 cup sugar at a time .)
4. Add 3 cups of all purpose flour to it . 1/4 cup at a time . Stir it very well till it become soft.
5. Add baking soda and baking powder. Stir it well .
6. Add pinch of salt.
7. Add 1/4 cup of vegetable oil and 1/ 2 cup of melted butter. Mix it well .
8. Add fresh orange juice to this mixture. Adjust its quantity as per thicknesses of batter. It should not be too dry.
9. If require add some more fresh orange juice or boiled water. Don't add milk in this cake as taste of orange juice may change texture of milk.
10. Add vennila essence. Stir it well .
11. Make sure there are not any lumps of flour in cake mixture. It should be soft and fluffy.
12. Add 3/4 cup of orange zest .It will give aavery nice taste to your cake .
Baking an orange cake :
1. If you have butter paper , spread it at the bottom of cake pan.
2. If you don't have butter paper, spread melted butter at the bottom of pan.
3. Put cake mixture into a pan.
4. Tap it to remove air gaps .
5. Keep this pan in preheated oven for 40 minutes at 180 °C.
6. To make sure your cake is completely backed, use cake taster or a toothpick.
7. Insert a toothpick in the centre of cake. It should come out clean without stresk of batter.
8. If not, let it bake of another 1 minute n check it again.
9. When it's baked completly , take it out of oven . Let it cool down for 15 minutes.
10. To take your cake out of the pan , separate cake edges from pan with knife. It's a good sign that your cake is baked nice when you don't need to use knife to separate edges from pan . It should separate out after cooling.
11. Move your cake pan upside down on wire tray. Tap a little and cake should come out smoothly.
12. It really looks tempting as it is without frosting and smell fresh.
Frosting :
1. Take 300 grams of soft cheese in a medium bowl.
2. Add 1/2 cup of butter to it.
3. Blend it with hand blender till it become soft.
4. Add powder sugar. Blend till it become fluffy mad soft.
5. Adjust its quantity as per sweetness of cream .
6. Add 1/2 tsp vanilla essence.
7. You can apply this soft frosting as it it on a cake or can refrigerate for 30 minutes till it become little hard .
8. Spread sweetned orange zest above cheese cream.
9. Keep this cake in fridge for 30 minutes.
10. Delicious n fresh orange cake ready to serve.
