Eggless Non Alcoholic Christmas Fruit Cake

Bake this eggless non alcoholic can fruit cake in advance of Christmas.


Ingredients :

1 cup thick curd
1 1/2 cup all purpose flour
1 cup powdered sugar
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1 spoon vanilla essence
Zest of 1 orange
1/4 cup softened butter
1/4 cup oil
1/4 cup Orange juice / Apple juice
1 tsp cinnamon and clove powder
Mixed dry fruits ( raisins, cashew , almond, cherries, plum , fig, seedless dates )

Method :

Soaking dry fruits :

Before starting recipe , make sure dry fruits cut in small pieces.

Take 1/4 cup water. Add 4-5 spoons sugar. Keep this mixture on stove . Keep flame medium high.  Bring it to boil .

Add dry fruits mixture in it . Simmer it for 5 minutes.

Add Apple juice / orange juice .
Keep it for overnight. This will help to soften dry fruits and will add nice flavour.


1.  Take 1 cup thick curd in your cake mixing bowl


2. With same cup measure 1 cup powdered sugar.


3. Add it in mixing bowl.


4. Mix it well . Mixture will become slimy.


5. Add 1 tsp baking powder.


6. Add 1/2 tsp baking soda. Mix it well. Mixture will become bubbley.
Add vanilla essence and mix it well.



7. Add soften butter and mix it well


8. Add vegetable oil in mixing bowl.


9. Add dry fruits soaked in sugar syrup and juice .
Mix this well.

10. Add all purpose flour in mixing bowl . Add one spoon at a time . Mix it well. Make sure there should not be any flour lumb formed.



11. Add orange zest. To make orange zest at home, keep 1 orange in refrigerator for 1 hour . Let it become hard. Grate its outer cover.

Mix it well.


Now your cake mixture is ready. Let's make your baking pan .

12. Take medium sized baking pan. 
Spread butter paper at its it bottom if you have. 
Else
Spread soften butter at bottom and sises of baking pan. Sprinkle dry flour. Tap it twice and remove extra flour from pan. 
This will help to come out your baked cake without sticking to pan.


13. Pour cake batter / mixture in baking pan.
Tap it twice to remove air bubble.


14. Decore with raisins and cashew nuts


15. Bake it at 200 degree Celsius temperature for 30 minutes.
To check your cake is properly baked or not , use taster or toothpick.
Insert it at center of cake. It should come out clean, without strick of batter.


16. Let it cool down completely. Tap it downward in a plate. It will come out without sticking at bottom.


Now it's really looking tempting.


17. Decorate with fresh fruits.


Your Christmas cake is ready to serve .
