DHABA STYLE SPICY CHICKEN

Dhaba Style Spicy Chicken is north Indian spicy non-vegetarian chicken recipe made in onion tomato and cashew masala . 

Flavours of aromatic Indian spices makes this dish so delicious !

Ingredients : 

Buy 500 grams chicken for 2-3 people


For gravy
1 big sized onion, 1 medium sized tomato
5-6 spoons oil
4-5 garlic cloves
1 inch ginger
1 green chilly
1 bay leaf , 2 cloves , 1 inch cinnamon
1 tsp Coriander seeds, 1 tsp cumin seeds
1 garam masala
salt for taste
1 tsp turmeric powder
1/2 tsp lemon juice
7-8 cashews
           +
Hand full of fried onions
Hand full of fresh coriander
3-4 fresh min leaves

For marinating
1 cup yogurt / curd
1 tsp turmeric powder
1 tsp garam masala
1 spoon ginger garlic paste
1 tsp salt

For garnishing
Chopped coriander
Fresh mint leaves
Fried onion

Note :
1. Don't use big size tomato . Sourness of tomato may change dish taste if over used.

2. Use only 1 tsp garam masala as we are adding whole spices in gravy too . If you don't have garam masala , increase  bay leaf ,  cloves and  cinnamon in quantity. They will give you same flavor.

Method : 

How to marinate and cook chicken separately ?  

You can use boneless chicken for this dish.

1. Wash chicken pieces clean . Cut them into bite size small pieces.

2. Add 1 cup creamy yogurt/curd.

3. Add 1 tsp turmeric powder, 1 tsp garam masala, salt as per taste.

4. Add 1 tsp ginger garlic paste too. 

5. Stir well. Make sure all pieces coated nicely.

6. Keep it in fridge . Marinate it overnight or at least 6 hours.



7. After marinated for 6 hours , take it out of fridge. Before cooking keep it at room temperature for at least 1 hour .

8. Add 2 big spoons of oil in it .

9. Keep it on medium flame for cooking. While cooking chicken always use thick bottom cooking pot.

10. Salt added along with curd in marination will start leaving water to chicken kept cooking on flame.

11. Cover it with lid . Let chicken cook it in this spicy salted water only .No need to add extra water in it.

12. Stir it in between.

13. To check chicken pieces cooked nicely , try to break it with fingers. It should  so soft that you can break it into two pieces without pressing it .


14 . Once cooked add 1 full glass water . Let it boil for another 2 minutes .


This will give us chicken stock to make chicken curry.

You can use this chicken stock as it is for kids . It is non spicy till this cooking stage.

This is considered as healthy for ill people who wants calcium rich food .


15. Take cooked chicken pieces out of its stock . We are going to add them into gravy later.



How to make gravy for Dhaba Style Spicy Chicken ? 

1. Soak 7-8 cashew nuts in look warm water .


2. Add 1/4 cop milk and grind these socked cashew nuts into fine paste.


3. Heat 2 tsp oil in a pan . 

4. Add cumin seeds , coriander seeds, chopped onion, chopped tomato, green chilly , ginger, garlic.

5. Saute well till onion becomes transparent and tomatoes becomes soft.

6. Add bay leaf , cloves , cinnamon .
Add 1/2 tsp turmeric powder, 1 tsp garam masala, salt to taste , 2 tsp red chilly powder and 1 tsp lemon juice and curry leaves.

7. Roast it well till it starts leaving oil.
  

8. Let this cools down completely . 

9. Grate it to fine paste. While grating add water as needed . 



Dhaba Style Spicy Chicken 

Lets make aromatic Dhaba Style Spicy chicken with gravy made above .


1. In a thick bottom cooking pot add 4-5 tsp oil for tampering . 

2. Once oil heated sufficient , add cashew nut gravy in it .

3. Roast it in oil till it becomes thick .

4. Add tomato , onion gravy in it . 

5. Stir well and roast till its starts separating oil. Its gives nice aroma when roasted perfectly . 


6. Add hand full of fried onions . You can make fried onions at home before staring this recipe .
Here I used ready made fried onions to keep cooking energy for Spicy chicken and obviously minimize my efforts :)
Mix it well .Let it cook for 1 minute with gravy .

7.  Add hand full of chopped fresh coriander leaves and 3-4 fresh mint leaves .


8. Let this gravy cook on low flame till separates oil .

9. If gravy seems too thick , add water to adjust its consistency .

10 . Mix already cooked chicken pieces in it . Let them cook along with gravy for about 1 minute ONLY.
As they are already cooked , no need to cook them again with gravy . Over cooking may break them into tiny pieces.

DON'T STIR MUCH after adding chicken pieces in gravy . There are very much chances of breaking chicken pieces due to stirring more .


11. Our Dhaba Style Spicy Chiken is ready to serve .

Once it is done , transfer this chicken in serving bowl  and garnish it with fresh coriander / mint leaves.
