Perfect recipe for kid's special Dry Fruit Muffins with step by step photos !

Ingredients :
2 cups all purpose flour
3 eggs
1/2 tsp baking soda
1 tsp baking powder
1 1/2 cup powdered sugar
1 tsp vanilla essence
1/4 cup butter
1/2 cup apple juice
Pinch of salt
Dry fruits as per your choice
Here I used chopped almonds, cashew nuts, black, dry appricot, raisins
Method :
PREHEAT OVEN AT 180 C DEGREE TEMPERATURE OF 15 MINUTES
Soak dry fruits in 1/2 cup apple juice OVERNIGHT.
Add eggs in a mixing bowl. Whisk it till become fluffy.
Add melted butter. Mix well.
Add powdered sugar 1/2 cup at a time. Whisk nicely.
Batter should become more fluffy.
Add all purpose flour to this mixture .
Mix this well till mixture becomes fluffy.
Add baking soda, baking powder , pinch of salt and vanilla essence.
Mix it well.
Add already soaked dry fruits along with apple juice.
Mix it well.
Cake mixture's consistency should be medium.
To adjust its thickness add apple juice if needed.
Pour cake mixture in it.
Tap it twice to remove air bubbles.
Bake this in preheated oven for 20 minutes at 180 degree C temperature .
To check cake baked completely, use tasted or toothpick. Pinch it at the middle of cake. It should come out without any sticky cake batter.
You can do icing as per your choice.
