Mint rice / Pudina rice is one pot delicious and full of flavours spicy South Indian dish made with fresh mint and rice.
You will definitely love this aromatic rice .
Mint rice recipe with step by step photos
Ingredients :
1 cup cooked rice
7-8 fresh mint leaves
1 chopped onion
2 green chillies
2 garlic cloves
1/2 inch ginger
1 spoon lemon juice
For tampering :
1 spoon oil
1 tsp Cumin seeds
1 bay leaf
1 clove
1/2 inch cinnamon
3-4 cashew nuts ( optional )
For garnishing :
2 spoons fried onion
2 spoon chopped fresh coriander
Method :
1. Wash fresh mint leaves.
2. Grate mint leaves, ginger, garlic and green chillies to fine paste.
Don't use water while grinding as we want dry paste.
2. In a cooking pot, heat oil for tampering.
3. Add cumin seeds..let them pop.
4. Add bay leaf, cloves, cinnamon and cashew nuts . Saute for a minute
5. Add chopped onion. Saute well till it become transparant.
6. Add mint , chilly paste that we already made.
Saute well. If this mixture looks watery ,saute for more time till water evaporates
7. Add lemon juice, salt and sugar to taste.
8. Add 1 cup cooked rice and mix well
Mint rice is ready to serve.
9. Garnish it with chopped coriander and fried onion.
Serve it hot with raita.
