MIRCHI KHARDA / MIRCHI THECHA / AUTHENTIC MAHARASHTRIAN GREEN CHILLI CHUTNEY

Green chillies kharda / thecha is authentic maharadhtrian hot spicy dish to serve with Jowar Bhakari.

Thecha made in traditional stone grinder tastes awesome ! 


Ingredients:

20 to 22 green chillies (Refer note no. 1)
1 large bowl coriander leaves washed
2 tbsp salt or as per taste (white)
7 to 8 garlic cloves
1 medium size chopped onion
1/2 spoon lemon juice (optional)

Recipe:

1.Wash green chillies, dry them with clean cloth or keeping in sunlight.
2. Cut out green chilli's lower part stem as we don't want it.
3. Peel 7 to 8 garlic cloves.
4. Take 1 large bowl of coriander leaves. Wash it well. Wipe with tissue or cloth . Make it dry in sunlight.
5. Chop 1 medium sized onion.
6. Add chilli, garlic and onion and 2 tbsp oil in heated iron pan and roast it well on high flame. 
Roasting it on iron pan will give this dish best taste and increase its nutritional value.
7. Keep it aside to cool down.
8. Add 2 tbsp of salt to it and crush it well. (Note no.3)
Use traditional stone grinder to make this recipe. If it's not available, you can use regular electric grinder.
9. Take 1/2 spoon of lemon juice and mix it well.

Note:

1. While selecting green chilli for KHARDA, select dark green colored  and thin chilies. They are always hot spicy.
2. If you will cut chilli's stem part and smell,  you can guess how spicy chilli is .
3. Taste of chilly thecha made with traditional stone grinder is  awesome than electric grinder .After all old is gold.
4. To make thecha less spicy, add roasted crushed peanuts while grinding .
5. People who don't like or can not eat spicy food can mix this authentic chilly KHARDA mixing with yogurt.
