JOWAR FLOUR SEV

Sev/ Shev is one of main ingredient in Indian chaat type street food.

This kids favourite dish usually made with gram flour . To get taste variations I use different types of flours . I shared here Jowar flour sev for kids. If you want it little spicy, add 1 tsp red chilly powder.

To get more crispyness , less oily and awesome taste I used jowar flour.

Ingredients :
2 cups jowar flour
1/2 cup wheat flour
1 tsp turmeric powder
Salt to taste
1/2 tsp Ajawain / carom seeds
4-5 spoons oil
Oil for frying
1 tsp red chilly powder ( optional )

Method :

1. In a mixing bowl , add 2 cups jowar flour, 1/2 cup wheat flour, 1/2 tsp turmeric powder, salt to taste, 1/2 tsp carom seeds.

2. Take 4-5 big spoons of oil in a small pot. Make it very hot. Add it to mixture in mixing bowl.
As it is very hot, it bubbles when you add with flour.


3. Mix this dry ingredients with hands. Make sure there is no flour lump remaining in it. If it is , try to break it by pressing it in fingures.


4. Take a lookwarm water. Add as it is needed. Knead dough to soft.
Cover it with wet cloth. Keep aside for 1/2 n hour.


5. To make sev , I used sev maker.

Here are few different types of sev maker with different hole sizes. I used the one with smallest holes as I want thin sev.

You can use any of it as per your choice of sev's  thickness.


6.  Take a small portion of dough. Put it in sev maker.

7. In a.shallow pan, heat oil for frying.  We are going to do deep fry. Adjust oil quality accordingly.

8. Press sev in heated oil. Make your stove flame medium.

9. Fry it from both sides.  Make sure you are not over frying it. Else it starts changing its colour to brown.

10. Take it out of oil. Remove it's access oil


11. Keep it on kitchen tissue for some time to soak it's excess oil.

Your jowar flour sev is ready. 

You can use it in bhel, chaat , sev puri or any  Indian street food .


For longer use store it in air tight container.
