Ingredients:
Dried skin of koum fruit 8-10 pieces
Or kokum fruit concentrated juice 1/2 cup
1 fresh coconut
1 green chilli
1 spoon cardamom powder
Fresh coriander leaves
3 garlic cloves
Method :
For this recipe we need to prepare two important ingredients
1. Coconut milk
How to make coconut milk from fresh coconut
1. Grate fresh coconut.
2. Put grated coconut and coconut water in a blender.
3. Add hot water as needed. Blend it to smooth paste. Hot water will help you to take out maximum milk from coconut and it will be thicker.
4. Squeeze as much liquid as possible from it . For squeezing you can you clean cotton cloth.
5. Blend again remaining solid part of coconut. Add hot water while blending.Squeeze out liquid from it.
6. Repeat above steps till all coconut milk get extracted and only dry solid coconut left without milk.
OR
You can use tinned readymade coconut milk
But freshly made coconut milk always gives awesome taste to solkadhi.
2. Kokum pulp
1. Soak dried kokum fruit's 8-10 pieces in hot water for about 2 hours.
2. Blend it in blender to make its thick paste.
3. Squeeze to get liquid part of it.
OR
You can use canned concentrated readymade kokum pulp.
Solkadhi recipe :
1. Add 1 and 1/2 cup coconut milk with 1/2 cup kokum pulp.
2. Add 1 spoon cumin powder in it
3. Grate 1 green chilly and 3 garlic cloves. Mix in coconut kokum mixture .
4. Mix it well.
5. Add fresh chopped coriander leaves for garnishing.
Solkadhi is ready to serve.
Serve it as side dish with any time meal.
