MIX VEGETABLE PARATHA

Mix vegetable Paratha is Indian style flat bread stuffed with dry mix vegetable saute in Indian spices. 

It is a north Indian dish that you can share with your loved one for breakfast or any time meal. This goes as kids lunch box too!

Ingredients  :

For dough  

1 cup wheat flour
Pinch of salt
Water as needed

For stuffing

Oil for tampering
1/4 tsp cumin seeds
1 cup grated carrot
1/2 cup of grated cabbage
1 Chopped tomato
1 Chopped onion
1/2 cup chopped capsicum  
1/4 boiled green peas
1 tsp ginger garlic paste
1 tsp red chilly powder
1 tsp garam masala / Pav bhaji masala
Salt as per taste 
1/4 cup corn kernels

Method

 Take 1 cup wheat flour .Add pinch of salt . Add water as needed to make edium soft dough like roti dough.
Keep it aside for 1/2 an hour to set.



To make paratha stuffing 

1. Add 2 spoons of oil for tampering in a cooking pot. Let it be hot. 
2. Add 1/4 tsp cumin seeds. Let them pop.
3. Add chopped onion. Saute well till golden golden brown.
4. Add chopped tomato. Saute well till it become soft.
5. Add ginger garlic paste. Saute for 1/2 minute 
6. Add chopped capsicum and saute until it turns soft.
7.A grated carrot and grated cabbage. 
5. Add 1/4 cup water . Cover with lid and let.it cook on medium flame.
6. Add boiled corn and green peas.
7. Saute well for a few more minutes. Make sure all vegetables are cooked nicely.
8. Add red chilly powder, garam masala / Pav bhaji masala whatever is available. 
Pav bhaji masala gives nice taste to your paratha stuffing.
9. Add salt to taste. 
Saute till this stuffing mixture becomes soft.
Keep this side till it gets cool.


To make Mix Vegetable Paratha

10. Take a small portion of dough. Roll it to ball. With a rolling pin make its 3 cm roti 
11. Put one  spoon stuffing at its center.


12. Cover it with dough from all side. Make its roll again.

13. With a rolling pin , make paratha of it. Don't press more while rolling it .



14. Roast it on heated pan from both sides till it turns golden brown and becomes crispy.



15. Apply homemade ghee and serve hot with pickle or chutney.
