Ingredients:
6 eggs
2 large onions
Roasted sesame seeds
Dried coconut 1/2 cups
2 spoons roasted peanuts
Handful Coriander
1 inch ginger, 4 garlic cloves
Salt to taste
1/2 tsp garam masalat
1/4 Turmeric powder
1 tsp Red chili powder
Method :
Roast boiled eggs
1. Boil eggs. If you are using pressure cooker, boil it for 10 minutes/ 3 whistles.
You can boil it in water filled pot too.
2. After boiling take them out of water. Let them cool down. peel them.
3. Heat shallow pan. Add 2 tsp oil in it .
4. Roast peeled eggs on a hot flame for a while.
5. While roasting eggs, add turmeric powder, salt and red chili powder each 1/2 tsp over it.
6. Eggs roasted over spices give best aroma and taste than just boiled eggs.
Egg curry gravy
2. Roast sesame seeds too
3. Mix chopped onion, sesame seeds, garlic, ginger, coriander, dried coconut together.
3. Add 1/2 cup water . Grind it to fine paste.
4. This masala should be finest paste.
Making Egg curry
1. Heat oil for tempering.
2. Add cumin seeds. Let them pop.
5. Add finely chopped onion , saute well till it becomes transparent.
6. Add gravy that we just made in grinder and roast it for 2 minutes.
7. Add red chili powder, salt, garam masala and saute for a minute. Roast till it starts releasing oil from gravy .
9. Add 1 cup of water and boil a high flame. You can adjust water quantity as per gravy thickness you desire.
10. Cover this mixture with lid and let it cook for another 5 minutes.
11. When the gravy is cooked, add roasted eggs to it. Cook it on low flame for 1 more minute with gravy
Egg curry is ready to serve.
Serve it with chapati, roti or rice.
