RAJMA MASALA / KIDNEY BEANS CURRY


RAJMA MASALA is Indian style kidney beans curry cooked in onion tomato curry , flavoured with Indiana spices

Serve it with Indian flat bread roti/ naan or with Jeera rice.



INGREDIENTS :

1 bowl boiled kidney beans
1 onion
2 tomatoes
2 garlic cloves
Small piece ginger
Oil for tampering
1 tsp cumin seeds
1 bay leaf
1/2 tsp turmeric powder
1 tsp garam masala
1 tsp red chilly powder
Salt to taste

Method :

1. Soak kidney beans in water overnight.

2. Steam them in pressure cooker with 4 whistle

3.  After cooling separate cooked kidney beans and it's stock .
Don't throw stock ( water left after cooking ) . We are going to use it in making RAJMA MASALA.
OR
You can use tinned kidney beans . They are precooked and with little stock .


4. Add onion , tomato, garlic, ginger together. In a grinder make a fine paste of it.

5. Heat 2 spoons oil for tampering.

6. Add 1 tsp cumin seeds and 1 bay leaf. Let them pop.

7. Add tomato onion paste we just made it in grinder.
Saute well till tomato's raw smell disappears. When roasts nicely , this paste starts leaving oil.

8. Add turmeric powder,red chilly powder, salt to taste, garam masala .

9. Saute well. It till it give nice aroma.

10. Add boiled kidney beans and 1/2 cup it's stock.

11. Saute let it cook on medium flame with all spices.

12. With a spoon try to smash few of rajmas . It gives thickness and nice flavour to your dish .

13. To adjust consistency add RAJMA stock left. Never use plain water while cooking this dish.

14. Spicy RAJMA MASALA is ready to serve.

15. Serve it hot with roti or Jeera rice.
