GOAN EGG DROP CURRY

I learned this Goa special egg drop curry from my mother. 


INGREDIENTS :

4 eggs
( KEEP EGGS IN FRIDGE FOR 30 MINUTES TO MAKE THEM COOL)
1 chopped onion
Oil for tempering
1/2 tsp garam masala
1 tsp red chilli powder
Salt to taste

For gravy
1 spoons fried onion
1/2 tomato
2 garlic cloves
Small piece of ginger
1 black cardamom
2 spoons roasted sesame seeds
2 spoon grated coconut

METHOD :


Add all ingredients listed above in FOR GRAVY together and make a fine paste of it.

1.  Here we want eggs really cold. We are going to break them in boiling curry.
If we break room temperature eggs , they mix unevenly.
To avoid it , I suggest you to use eggs kept in refrigerator. Cold eggs don't mix unevenly in curry .


2. Heat oil for tempering.

3. Add 1 chopped onion and 1/2 tsp cumin seeds.

4. Saute till onion turns golden brown.

5. Add 1/2 tsp turmeric powder.

6. Add gravy that we just made.

7. Saute we to roast nicely.

8. Add red chilli powder, garam masala and salt.

9. Saute for 1 minutes.

10 . Once gravy is roasted nicely , add 1 cup warm water.

11. Boil it on medium heat.


 12. Let curry boil and cook nicely before you break eggs in it . Because we will avoid it's boiling after adding eggs.






13. Take really cold eggs , just took out from refrigerator.

14. Make your gas flame low. Wait till curry stops its boiling. We don't want boiling curry while breaking eggs now.

15. Break an egg at middle of curry, carefully and slowly. Don't drop it from height. Add it in curry smoothly so that it will settle in curry without disturbing


16. Break remaining eggs around it leaving space in between.

17. Let it cook on low flame for next 10 minutes. Don't  mix eggs in curry.

18. After 10 minutes make stove flame medium to cook eggs nicely.


19. Don't disturb curry while cooking.

Delicious, Goa special egg drop curry is ready to serve.


Serve it with bhakari or Jeera rice.
