ZERO OIL DELICACIES - INSTANT RAWA UTTAPA

 


INGREDIENTS

1 bowl fine semolina ( RAWA )  🍚

3/4 bowl thick sour curd  🥣

2 spoons atta ( all purpose flour ) 🥄🥄 

2 spoons rice flour 🥄🥄

Salt and sugar to taste 🥄

Pinch of baking soda ( optional )

Water as needed 


 For topping 

Finely chopped onion

Finely chopped tomatoes

Finely chopped coriander

Chopped green chillies

Chopped cashew nuts ( optional )



PROCEDURE 

HOW TO MAKE RAWA UTTAPA BATTER ? 

1.   Add semolina ( RAWA ) , atta, rice flour and curd together. 

2. Mix well. Add water as needed to adjust its consistency. Batter should at same consistency of regular dosa batter. 

3. Add punch of sugar and salt to taste. 

4. Add crushed dry curry leaves. This is optional .

5. Mix this batter and keep for 2 hours. 


HOW TO MAKE RAWA UTTAPA ? 

1.  Heat non stick pan on high flame.

2. Pour one portion batter on heated pan. Don't spread it like dosa. We want thick and spongy UTTAPA.

3. Spread handful of chopped onion, tomatoes and coriander. 

4. Sprinkle chopped cashew nuts and chopped green chillies. 

5. Press all topping with your palm. Make sure everything sticks to batter nicely. 

6. Cover with lid and let it cook for 3-4 minutes on medium flame.

7. Once cooked, turn other side. Let it cook for 2 more minutes.

8. Oil free onion UTAPPA is ready.
