SAMBAR - SOUTH INDIAN STYLE LENTILS CURRY

SAMBAR is south Indian lentils curry that usually serves with Dosa , Idli , Urid vada, Utappa and other south  indian dishes.

INGREDIENTS :

1 cup tur Dal / yellow lentils🍚🍚
1/4 cup urad daal/ white lentils🍚 (optional)
Oil for tempering
1 onion cube sliced 🌰
1 tomato cube sliced🍅
Chopped bottle gourd 1/2 bowl
2 drum sticks chopped in small pieces
1 tsp cumin seeds
1 tsp ginger garlic paste
1/4 tsp turmeric powder
4 fresh curry leaves
2 spoons readymade sambar masala
1/2 tsp red chilly powder
Salt to taste
1 tsp sugar
2 spoons tamarind paste

HOW TO MAKE SOUTH INDIAN SAMBAR? 



1. Take tur dal and urad dal together in pressure cooker pot.

2. Wash it two times.

3. Cook it in pressure cooker till 3 whistles.

4. Let it cool down.

5. Heat oil for tampering.

6. Add cumin seeds, thin sliced onions, chopped tomatoes, ginger garlic paste, curry leaves, asafoetida together.

7. Saute for at least 2 minutes till tomato cooks soft and onion changes to golden brown.

8. Add chopped vegetables of your choice . Generally bottle gourd and drumsticks are used.

9. Saute well.

10. Add  some warm water. Cover it with lit. Let vegetables cook for 5 minutes / till drumsticks becomes soft.

11. Mix well.

12. Add turmeric powder, red chilly powder.
You can add turmeric powder after cooking vegetables in water. Sometimes it gives gives bitter taste to drumsticks.

13. Once vegetables are cooked with water, add pressure cooker cooked lentils / dal in it.

14. Add sambar masala  and tamarind paste in it.

15 . Mix well
 Make sure there are no lumps of sambar masala formed in curry .

16. Add salt to taste and 1 tsp sugar. Add warm water to adjust its consistency.

17. Let it cook for 2 more minutes

18. Your SAMBAR is ready to serve. Serve it hot with south indian dishes.
